I

’ve heard that opening a restaurant is not for the faint of heart. The hours can be long, the work exhausting, the margins slim, employees hard to keep and the customers … well, let’s just say some are wonderful and some aren’t. Yet I’ve been told by more than one person that owning a restaurant can be the most rewarding experience of your life. And that, more than anything, is what prompts many people to start their own restaurants and stay in the business for years. You also have to believe your food is delicious and that it will keep diners coming back for more, in many cases year after year. I’m sure these are some of the things that prompted many of the restaurant owners who are advertising in Dining Out to get into the business and to stay in it. They each know they have a gift for food and they want to share that gift with others. Those others — us — are the beneficiaries of their gifts, desire and drive.

DINING OUT It makes for a delightfully diverse and tasty world, doesn’t it? Here in California, even in the High Desert, we have our choice of all manner of food, from Chinese and Japanese to Mexican and Italian, and from Thai and Vietnamese to sandwiches and good, old American fare. It was the author William Cowper who said “Variety’s the very spice of life, that gives it all its flavor.” Well, he certainly got that right when it comes to dining choices, didn’t he? That’s one of the things I love about this region. When eating plays as important a role in life as it does, there’s no reason for us to lead a boring existence. Go. Explore. Eat. -- Steve Hunt

7 ways to be kind to restaurant food servers T

he restaurant industry is booming, with new restaurants entering the challenging foodservice market every day. The National Restaurant Association says restaurants in the United States generate roughly $2 billion in sales on a typical day. Media Edge, a Canadian trade resource, says the foodservice industry play a major role in Canada’s economic growth by providing so many jobs. Food servers are among some of the hardest working employees in the industry, but sometimes their efforts go unrecognized. The following are a handful of ways diners can show their appreciation to the men and women who work hard to ensure their customers enjoy their dining experiences. 1. Recognize that waiting tables is no easy task. Waiting tables is both physically and mentally demanding. Servers spend hours on their feet carrying and balancing plates of food during their shifts. Servers also must anticipate the needs of diners and do their best to accommodate them. Acknowledge that servers’ jobs are not easy when dining out, and express your gratitude for their hard work whenever possible. 2. Recognize that slow food often is not servers’ faults. Very often a food server has no control over how fast the food comes out of the kitchen. A very busy meal service can stall an inexperienced kitchen. Don’t blame the server because the food took lon-

ger than expected to arrive on your table. If you’re in a hurry, let the server know in advance so he or she can work with you. 3. Look up at your server. Eye contact shows respect and it will help get your order across clearly, reducing the likelihood of a mixup regarding your order. 4. Put down your phone. Distracted diners are sometimes to blame for slow service. In 2014, a popular New York restaurant took matters into its own hands after constant complaints of slow service. After examining surveillance footage of the dining room from 2004 to 2014, the restaurant owner discovered the wait staff hadn’t changed its techniques, but the customers’ use of cell phones had slowed table turnover from one hour and five minutes to one hour and 55 minutes. Taking pictures of food, texting before ordering or asking a server to

ith origins in China and Japan, sushi is an Eastern delicacy. However, there is no denying the popularity of sushi elsewhere in the world, particularly in North America. As with many ancient foods, sushi’s origins h av e a n e l e m e n t o f mystery to them. The original type of sushi i s b e l i e v e d t o h av e first been developed in southeast Asia before

spreading to southern China. Sushi was event u ally in t rod u ce d to Japan around the 8th century, where it would evolve into the type of sushi many people enjoy today. Acco rd i n g t o T h e History Kitchen, a division of PBS Food, one origin story for sushi i nv o l v e s a n a n c i e n t Japanese wives’ tale. According to that tale, an elderly woman began hiding her pots of rice in osprey nests, fearing that thieves would steal

them. When she collected her pots, she found the rice had begun to ferment. She also discovered that fish scraps from the osprey’s meal had mixed into the rice. Upon sampling the mixture, she found the rice helped to preserve the fish. She also found that the resulting meal was tasty. Early Chinese sushi i nv o l v e d fe r m e n t i n g fish on rice to preserve it. The rice was thrown away and the fish was eaten wh en d esi red .

The Japanese took their own approach to sushi, deciding to eat the rice w i th th e f ish . Sush i innovator Matsumoto Yoshiichi began seasoning the sushi rice with rice wine vinegar. This made it possible to eat the sushi immediate ly, instead of waiting months for it to ferment. Through the years, enterprising individuals began selling sushi to others. In the 19th century, rather than wrapping the fish in

rice, sellers placed it on beds of rice and sometimes other ingredients. This presentation of sushi, credited to a man named Hanaya Yohei, became very popular. This type of sushi is called Ònigiri sushi (finger sushi). After World War II, the sushi style of presenting fish was adopted by western cultures. S u s h i p re p a rat i o n and dining is an art form that continues to evolve. New influences have changed sushi

even more by marrying traditional recipes with fusion styles. Demand for sushi continues to increase. According to Statistic Brain’s sushi industry statistics, there are 16,000 sushi restaurants outside of Japan, with close to 4,000 in the United States alone. PPLE VALLEY — Recipes that transcend generations are often created with love and a desire to please. The tradition of making food with love is alive and well at DiNapoli’s Firehouse, with locations in Barstow and Apple Valley. Tony Robledo is the restaurant’s manager, carrying the values of DiNapoli’s close to his heart. In fact, he believes the restaurant to be a steward of good flavor and filling meals, all based on the recipes of “Grandmother DiNapoli.” “In this business, people do things differently (at different restaurants),” Robledo said as he spoke to Dining Out recently from the Apple Valley location. “From Italian to Italian, pizzeria to pizzeria, there’s really no one way to do it. “We don’t try to be the best, we try to be our best.”

T h e f o o d t h a t ’s become the restaurant’s signatures — hearty Italian meals from lasagna and stromboli to hand-tossed pizzas and monstrous sandwiches — proves DiNapoli’s commitment to being a highly sought-after spot to dine. “It’s hard to satisfy everybody,” Robledo said. “But everything is made with care. This is how we make our food, and we always want to make sure our customers are happy.” While the restaurant’s dishes “speak for themselves” and sell equally in terms of measured quantity, Robledo said he’s recently added some new items that have had a remarkable response. “A Sicilian man came in offering product that he was making by hand,” Robledo said. Some of those products included a five-cheese stuffed tortellini, gnocchi and a lobster ravioli. “He brought it in, I put it out and it took off in just the first day on the menu. It’s done so well and the


young crowd just loves it.” It’s the younger crowd that seems to be interested in the seafood items these days and continues to pile into the restaurant, but the longer-tenured clientele at DiNapoli’s hasn’t gone anywhere. “Our regular clients have been with us through the toughest

times,” he said. “Without them, we’re nothing. We thank those customers who are like family to us.” Family is undoubtedly a strong word here, from the origin of the recipes to the tight-knit nature of the staff and customers. Robledo says his assistant general manager, Jan, who’s been with the restaurant for many years, has fought for her

own life and yet continues to race back to the restaurant. “She’s been in and out, battling cancer over the last three years,” he said. “But she’s back again, with an army of customers always waiting for her and her family — her own and ours — supporting her.” Familiar faces, quality dishes, tradition

ative way — I say, ‘this is going to make me better, it’s going to make us better.’ “Our focus is always on our employees and our customers. Without happy employees, you

ometimes the best ideas come from necessity. “Necessity” is the backstory of A1 Grill Teriyaki & Roll in Hesperia. Owners Mr. and Mrs. Koo opened their restaurant because Mrs. Koo could not enjoy many of the her favorite Korean dishes. As you know, many Asian foods are made with (or served in) wonderful dipping sauces or marinades — clam or fish sauce, teriyaki, hoisin, soy, orange and more. These sauces add everything from mild flavor to a “kick.” Often, however, they contain sodium or preservatives such as MSG (monosodium glutamate, a substance found naturally in foods but added to many dishes as a flavor enhancer). These additives can trigger food sensitivities. Mrs. Koo spent a lifetime in the kitchen and began to experiment with the sauce recipes, using fresh ingredients and
